Joaquín Hidalgo highlights, in general terms, the outstanding quality of the different whites in recent years, as well as explaining the path taken by several producers, where there has been a strong commitment to experimentation and the vindication of varieties that have been adapted to high-altitude desert terroirs.
He comments on a greater study and understanding by several wineries of the characteristics that the extreme continentality of our climate provides to the character of the wines. Particularly, as the author points out, to the profile of high altitude white wines, wines with great concentration, ripe fruit aromas and flavours and refreshing acidity. The most important point he makes is that in this trend of experimentation and commitment to innovation and creativity, it is those producers who have a well-defined direction and greater experience who come out on top in terms of quality.
